Abstract

ABSTRAK Beberapa petani paprika yang tergabung dalam Koperasi Tani Gerbang Mas, desa Cibodas telah memiliki pelanggan tetap yaitu restoran waralaba ABC. Mereka mengalami kendala dalam memenuhi permintaan konsumen. Tujuan penelitian ini adalah menjelaskan proses rantai pasok paprika dari hulu (petani) hingga ke hilir (restoran waralaba ABC), mengetahui kinerja rantai pasok paprika, dan memberikan usulan perbaikan terhadap kinerja rantai pasok paprika. Hasil analisis dengan FSCN menunjukkan aliran proses dalam rantai pasok telah berlangsung dengan baik. Hasil pengukuran kinerja dengan menggunakan beberapa metrik SCOR menunjukkan bahwa secara umum baik petani maupun koperasi telah berhasil mencapai nilai superior, namun terdapat beberapa indikator pengukuran yang tidak mencapai superior seperti pemenuhan pesanan (POF) yang hanya mencapai nilai 88,40% untuk paprika hijau dan 82,11% untuk paprika merah, serta persentase biaya rantai pasok yang dikeluarkan oleh Koperasi Tani Gerbang Mas lebih besar dari profit yang diperoleh. Nilai farmer’s share yang diperoleh petani yaitu 90,48% untuk paprika hijau dan 92,46% untuk paprika merah. Margin pemasaran pada Koperasi Tani Gerbang Mas yaitu sebesar Rp2.000, dimana persentase biaya pemasaran lebih besar dari keuntungan yang diperoleh. Solusi yang dapat dilakukan oleh petani anggota adalah dengan memperluas lahan greenhouse, atau dengan meningkatkan penggunaan lahan. Sementara untuk meningkatkan kinerja Koperasi Tani Gerbang Mas dapat dengan mengoptimalkan perencanaan penanaman paprika bersama petani anggota. Jika pasokan tidak dapat dipenuhi oleh petani anggota, Koperasi Petani dapat memasok kekurangan dari pemasok di luar petani anggota. Kata Kunci: Rantai pasok, Paprika, FSCN, SCOR ABSTRACT Some paprika farmers who are members of the Gerbang Mas Farmers Cooperative, Cibodas village already have regular customers, the ABC franchise restaurant. They experience obstacles in meeting consumer demand. The purpose of this study is to explain the process of paprika supply chain from upstream (farmers) to downstream (ABC franchise restaurant), find out the performance of paprika supply chains, and provide suggestions for improvements to the performance of paprika supply chains. The results of the analysis with the FSCN show that the process flow in the supply chain has been going well. The results of performance measurements using several SCOR metrics show that in general both farmers and cooperatives have succeeded in achieving superior values, but there are some measurement indicators that do not reach superior such as order fulfillment (POF) which only reaches 88.40% for green peppers and 82 , 11% for red paprika, and the percentage of supply chain costs incurred by the Gerbang Mas Farmer Cooperative is greater than the profit earned. The farmer share value obtained by farmers is 90.48% for green peppers and 92.46% for red peppers. The marketing margin at Gerbang Mas Farmers Cooperative is Rp. 2,000 where the percentage of marketing costs is greater than the profits. The solution that member farmers can do is to expand greenhouse land, or by increasing land use. To improve the performance of Gerbang Mas Farmers Cooperative by optimizing the planning of planting paprika with member farmers. If the supply cannot be fulfilled by member farmers, farmers cooperative can supply shortages from suppliers outside the member farmers. Keywords: Supply chain, paprika, FSCN, SCOR
