ABSTRAK Salsabila, Shahnaz, 2025. Pengendalian Persediaan Daging Kita di Perum Bulog Kantor Cabang Subang Menggunakan Metode Min-Max Stock. Tugas Akhir, Jurusan Administrasi Logistik Universitas Logistik dan Bisnis Internasional. Pembimbing: Dr. Noneng Nurjanah, S.P., M.T. Penelitian ini dilakukan di Perum BULOG Kantor Cabang Subang dengan fokus pada pengendalian persediaan komoditas daging kita, Permasalahan utama yang dihadapi adalah ketidakseimbangan antara stok dan permintaan, yang mengakibatkan terjadinya kekurangan maupun kelebihan stok pada beberapa bulan. Hal tersebut berdampak pada kelancaran distribusi dan kualitas produk. Penelitian ini bertujuan untuk menentukan jumlah safety stock, batas minimum dan maksimum persediaan, jumlah pemesanan optimal, serta titik pemesanan ulang dengan menerapkan metode Min-Max Stock. Metode yang digunakan bersifat kuantitatif dengan pendekatan perhitungan berdasarkan data historis permintaan selama satu tahun. Hasil perhitungan menunjukkan bahwa safety stock yang dibutuhkan sebesar 275 kg, minimum stock 5.092 kg, dan maksimum stock 9.909 kg. Jumlah pemesanan per siklus adalah 9.634 kg, sementara titik pemesanan ulang ditetapkan pada angka 5.092 kg. Dengan menerapkan metode ini, perusahaan dapat menjaga ketersediaan stok secara lebih terkontrol dan efisien, serta meminimalkan risiko kehilangan penjualan maupun pemborosan akibat overstock. Penelitian ini merekomendasikan agar perusahaan mulai beralih ke sistem pengendalian stok berbasis data agar pengelolaan persediaan lebih terstruktur dan akurat. This study was conducted at Perum BULOG Subang branch office with a focus on controlling the supply of our meat commodities, the main problem faced is the imbalance between stock and demand, which resulted in shortages and excess stock in several months. This has an impact on the smooth distribution and quality of products. This study aims to determine the amount of safety stock, minimum and maximum inventory limits, the optimal number of orders, and reorder points by applying the Min-Max Stock method. The method used is quantitative with a calculation approach based on historical demand data for one year. The calculation results show that the required safety stock is 275 kg, the minimum stock is 5,092 kg, and the maximum stock is 9,909 kg. The number of orders per cycle is 9,634 kg, while the re-order point is set at 5,092 kg. By applying this method, the company can maintain stock availability in a more controlled and efficient manner, and minimize the risk of loss of sales and waste due to overstock. The study recommends that companies begin to switch to data-driven stock control systems for more structured and accurate inventory management.
