Abstract

ABSTRAK Menurut data dari Badan Pusat Statistik, pada tahun 2016 produksi panen bawang merah mentah di Indonesia berjumlah sekitar 1.446.869 ton, pada tahun 2017 berjumlah sekitar 1.470.155 ton, dan pada tahun 2018 meningkat sekitar 1.503.438 ton. Bawang merah mentah ini juga merupakan salah satu tanaman yang memiliki kandungan dan senyawa yang sangat tinggi, sehingga di zaman dahulu hingga sekarang orang banyak menggunakan bawang merah mentah sebagai bahan herbal dan juga tradisional untuk menyembuhkan berbagai penyakit serta menyehatkan kesehatan tubuh. Rantai pasok pangan berbeda dengan rantai pasok produk dan jasa lainnya. Perbedaan yang mendasar antara rantai pasok pangan dengan rantai pasok lainnya adalah perubahan yang terus menerus dan signifikan terhadap kualitas produk pangan di seluruh rantai pasok hingga pada titik akhir, produk tersebut dikonsumsi. Penelitian ini bertujuan untuk mengetahui rantai pasok bawang merah mentah dan usaha bawang goreng. Data primer yang terlah dikumpulkan dengan observasi dan wawancara kepada pihak yang terlibat seperti petani bawang merah mentah dan pemilik usaha bawang goreng. Metode yang digunakan adalah analisis kualitatif deskriptif dengan pendekatan Food Supply Chain Networks dan analisis kuantitatif deskriptif. Dari hasil penelitian yang didapatkan dengan metode analisis FSCN bahwa analisis rantai pasok usaha tani bawang merah mentah dan usaha bawang goreng terdiri dari sasaran rantai pasok, struktur dan aliran rantai pasok, manajemen rantai pasok, sumber daya, dan proses bisnis rantai pasok. Total biaya produksi pada usaha bawang goreng sebesar Rp. 3.750.000, sedangkan total biaya pendapatan pada bulan Oktober 2020 sebesar Rp. 1.145.000. ABSTRACT According to data from the Central Statistics Agency, in 2016 the production of shallot harvest in Indonesia was around 1,446,869 tons, in 2017 it was around 1,470,155 tons, and in 2018 it increased by around 1,503,438 tons. Shallots this also one of the plants that contain compounds that are very high and, so in ancient times until now people use onions as a traditional herbal ingredient and to cure various diseases and nourish the health of the body. The food supply chain is different from the supply chain for products and services other. The fundamental difference between the food supply chain and other supply chains is the continuous and significant change in the quality of food products throughout the supply chain until the end point, the product is consumed. This study aims to determine the supply chain of shallots and fried onions business. Primary data collected by observation and interviews with parties involved such as shallot farmers and fried onion business owners. The method used is descriptive qualitative analysis with Food Supply Chain Networks approach and quantitative descriptive analysis. From the research results obtained with the FSCN analysis method that the supply chain analysis of shallot farming and fried onion business consists of supply chain targets, supply chain structure and flow, supply chain management, resources, and supply chain business processes. The total production cost in the fried onion business is Rp. 3,750,000, while the total cost of income in October 2020 was Rp. 1,145,000.
